Ingredients
- 7 tomatillos
- 1 1/2 jalapeños
- 2 cloves garlic
- 1/4 tsp cumin
- 1/4 tsp salt
- 1/4 red onion
- 1 1/2 tbsp fresh cilantro
- olive oil and vinegar (optional)
- freshly squeezed lime juice (optional)
Steps
- Place the tomatillos, jalapeños, garlic, and onion in a medium saucepan and cover them with water.
- Bring the water to a boil, then simmer the vegetables for 8 to 10 minutes until softened.
- Drain the vegetables and let them cool for 5 minutes.
- Blend the vegetables with cilantro, cumin, salt, and lime juice until smooth.
- Stir in a small splash of vinegar or olive oil, if using, and chill for 10 minutes.
