- 2 large vegan flour tortillas
- 2/3 cup spreadable vegan mexican cheese
- 2/3 cup vegan refried beans
- 1/2 ripe avocado
- 1/2 cup red onion
- 1/2 cup finely diced tomato or chunky salsa
- 1/2 cup fresh cilantro
Steps
- Spread the vegan cheese evenly over both tortillas.
- Spread the refried beans over the cheese, leaving a 1-inch edge.
- Layer on mashed avocado, red onion, tomato or salsa, and cilantro.
- Roll each tortilla tightly, wrap the rolls, and chill them for 15 minutes.
- Slice each roll into pinwheels with a sharp knife.
