Ingredients
- 1 crown roast of pork
- 1 tbsp olive oil
- 2 tsp kosher salt
- 1 tsp black pepper
- 1 large onion
- 1 lb ground pork breakfast sausage
- 4 tbsp salted butter
- 4 ribs celery
- 1 onion
- 2 large apples
- 1 cup fresh cranberries
- 2 tsp poultry seasoning
- 1 tsp ground sage
- 16 cups dry bread cubes
- 3 1/2 cups chicken broth
- salt and pepper to taste (optional)
- 2 tbsp dijon mustard
- 2 tbsp brown sugar
- 1 1/2 tsp apple cider vinegar
Steps
- Heat the oven to 350 F, rub the pork with olive oil, salt, and pepper, and place it in a roasting pan.
- Brown the sausage in a large skillet for 8 minutes, then add butter, chopped onions, celery, apples, poultry seasoning, and sage and cook for 8 minutes.
- Stir the bread cubes, cranberries, and chicken broth into the skillet mixture, then transfer it to a greased 9-by-13-inch baking dish.
- Cover the stuffing with foil and bake it beside the roast for 45 minutes.
- Roast the pork for about 2 hours and 30 minutes, then remove the foil from the stuffing and continue cooking until the stuffing reaches 165 F and the pork reaches 145 F.
- Stir the mustard, brown sugar, and vinegar together, brush it over the roast, and cook for 10 minutes before resting the roast for 15 minutes.
