3/4 cup sweet peas
3 ripe avocados
2 scallions
1 1/2 serrano chiles
1/4 cup chopped cilantro
1/4 cup chopped mint
1/4 cup fresh squeezed lime juice
2 tsp kosher salt
1 large white sweet potato
1 tbsp oil
salt

Steps

Heat the oven to 425 F.
Slice the sweet potato into 1/8-inch rounds and toss with oil and salt.
Bake the slices on a sheet pan for 20 to 25 minutes, turning halfway.
Boil the peas in water for 2 minutes, then drain and cool.
Mash the peas and avocados with scallions, serrano chiles, cilantro, mint, lime juice, and salt.
Chill the guacamole for 10 minutes and arrange the sweet potato chips around it.
