1 tbsp baking powder
1/4 tsp salt
2 tbsp light butter or coconut oil
1 large egg
1 tbsp vanilla extract
3/4 cup low fat/skim or almond milk
10 tsp jam of choice
1/4 cup caster sugar
4 tbsp jam
3 tbsp boiled water

Steps

Whisk the plain flour, baking powder, and salt in a medium bowl.
Melt the butter or coconut oil in a skillet over medium heat.
Whisk the egg, vanilla, milk, and melted fat together, then stir them into the dry mixture.
Cook pancakes in the skillet for 2 minutes per side, using about one-tenth of the batter for each.
Place a teaspoon of jam between two pancakes and repeat with the remaining pancakes.
Stir the remaining jam, caster sugar, and boiled water together, then drizzle it over the pancake stacks.
