- 2 tbsp olive oil
- 1 3 pound chuck roast
- 1 cup beef broth
- 1 25 gram packet au jus gravy mix
- 1 25 gram packet brown gravy mix
- 1 25 gram packet hidden valley ranch dressing mix
- 8 pepperoncini peppers
- 3/8 cup pepperoncini juice
- 2 tbsp butter
Steps
- Heat the olive oil in a 6-quart Instant Pot using the sauté setting.
- Brown the roast for 10 minutes, turning to sear each side.
- Add the broth, gravy mixes, ranch dressing mix, pepperoncini, pepperoncini juice, and butter.
- Pressure-cook on high for 75 minutes, then let the pressure release naturally for 30 minutes.
- Shred the roast when it reaches at least 145 F and is fork-tender.
