- 1 kg flour
- 1 l water
- 1 tsp salt
- 220 g melted butter
- 200 ml vegetable oil
- 5 tbsp greek yogurt

- 500 ml sour cream
- 3 tbsp olive oil
Steps
- Whisk the flour, water, and salt into a thin batter, then let it rest for 10 minutes.
- Heat the oven broiler to high and place a lightly oiled 10-inch ovenproof skillet 6 inches below the heat.
- Mix the melted butter and vegetable oil with the Greek yogurt for the layer coating.
- Pour a thin layer of batter into the hot skillet and broil for 2 to 3 minutes, until set and lightly browned.
- Brush the layer with the butter mixture, add another thin batter layer, and broil; repeat until the batter is used.
- Mix the sour cream, clotted cream, remaining melted butter, remaining vegetable oil, and olive oil, then spread it over the top.
- Broil for 3 to 5 minutes, until the top is browned, then rest the layered pancake for 5 minutes before cutting.
