Ingredients
- 8 bone-in chicken thighs
- olive oil for drizzling (optional)
- 1 1/2 tbsp baking powder
- 2 tsp each paprika
- 1 1/2 tsp each chili powder
- 1 tsp each dried oregano
- 1/2 tsp each dried thyme
Steps
- Heat the oven to 425 F and line a large baking pan.
- Mix the baking powder, paprika, chili powder, oregano, thyme, salt, and pepper.
- Pat the chicken thighs dry and coat them evenly with the seasoning.
- Place the thighs skin-side up in the pan.
- Bake for 45 to 50 minutes, until the thickest thigh reaches 165 F.
- Rest the chicken for 5 minutes before serving.
