The amounts listed are small for a full dinner, so this price per serving is likely low. Plan on a side or a bigger portion.

Ingredients

  • 2 lb bone-in skin-on chicken thighs
  • 1 tbsp olive oil
  • 1 tsp lemon pepper seasoning
  • 1/2 tsp dried rosemary
  • 1/2 tsp garlic powder
  • 1/2 tsp black pepper
  • 1 1/4 cup chicken broth
  • 1/2 onion

Steps

  1. Season the chicken thighs with lemon pepper, rosemary, garlic powder, and black pepper.
  2. Set a 6-quart pressure cooker to sauté, heat the oil, and brown the chicken skin-side down for 5 minutes.
  3. Turn the chicken, add the onion and broth, and scrape up any browned bits.
  4. Seal the cooker and pressure-cook on high for 10 minutes.
  5. Let the pressure release naturally for 10 minutes, then release any remaining pressure.
  6. Check that the chicken reaches 165 F before serving.
