spray oil
salt and pepper
2 oz cabot's 75% light vermont cheddar
1 cup cooked broccoli florets

Steps

Heat the oven to 425 F and place the potatoes on a baking sheet.
Bake the potatoes for 35 minutes, or until tender when pierced with a fork.
Halve the potatoes, scoop out most of the centers, and season the shells with salt and pepper.
Fill the shells with cooked broccoli and shredded cheddar.
