1 sweet potato
1/2 cup millet
3 1/2 cup vegetable broth
7 oz firm tofu
1/2 tbsp cornstarch
1/4 tsp salt
2 tsp vegetable oil
1 tbsp teriyaki sauce
1 tsp sriracha
1/4 cup grated carrot
1/4 cup pickled red onions

Steps

Peel and cube the sweet potato, then rinse the millet.
Combine the millet, sweet potato, broth, and salt in a medium pot and bring to a boil.
Reduce the heat and simmer uncovered for 40 minutes, stirring occasionally, until the millet is soft and creamy.
Cut the tofu into cubes, coat it with cornstarch, and pan-fry it in oil over medium heat for 8 minutes, turning until golden.
