Ingredients
- 1 package (16 oz) dried green split peas
- 1 meaty ham bone
- 1 large onion
- 1 tsp salt
- 1/2 tsp pepper
- 1/2 tsp dried thyme
- 1 bay leaf
- 1 cup chopped carrot
- 1 cup chopped celery
Steps
- Rinse the split peas and place them in a large pot with the ham bone, onion, thyme, bay leaf, salt, pepper, and 8 cups water.
- Bring the pot to a boil over medium-high heat, then reduce the heat and simmer uncovered for 100 minutes.
- Remove the ham bone and bay leaf, then stir in the carrot and celery.
- Simmer the soup for 40 minutes, stirring occasionally, until the peas and vegetables are tender.
- Remove meat from the bone, return it to the pot, and simmer for 10 more minutes.
