Ingredients

  • 2 tbsp olive oil
  • 1 onion
  • 1 large carrot
  • 1/2 cup finely chopped celery
  • 4 cloves garlic
  • 2 cups shredded cooked ham
  • 1 1/2 quarts chicken stock or broth
  • 2 bay leaves
  • 3 tbsp chopped fresh flat-leaf parsley
  • 4 canned white beans -- no salt added
  • 1/2 tsp black pepper
  • 1 pinch salt

Steps

  1. Heat the olive oil in a large pot over medium heat.
  2. Cook the onion, carrot, and celery for 4 minutes, until slightly softened.
  3. Stir in the garlic and cook for 1 minute.
  4. Add the ham, chicken stock, bay leaves, beans, pepper, and salt.
  5. Bring the soup to a simmer and cook for 8 minutes.
  6. Remove the bay leaves and stir in the parsley before serving.
