1 lb baby yukon gold potatoes
3 tbsp olive oil
2 cloves garlic
1 tsp dried oregano
1/3 cup freshly grated parmesan cheese

Steps

Heat the oven to 425 F and line a large baking sheet with oil.
Boil the potatoes in salted water for 15 minutes, then drain them.
Mix the olive oil, minced garlic, oregano, salt, and pepper in a small bowl.
Arrange the potatoes on the baking sheet and press each one flat.
Brush the potatoes with the garlic oil and roast for 20 minutes.
Sprinkle on the parmesan and roast for 5 more minutes, then garnish with parsley.
