1/2 cup chopped nuts
1 1/2 cups rolled oats
1 cup brown sugar
1/4 tsp salt
1 1/2 cups flour
1 cup shortening
1/4 tsp vanilla
3 cups chopped rhubarb

2 tbsp cornstarch
1/4 cup water

Steps

Heat the oven to 350 F and grease a 9-by-13-inch baking pan with cooking oil.
Stir the oats, nuts, brown sugar, salt, flour, shortening, and 1/4 teaspoon vanilla into a crumbly mixture.
Press half the mixture evenly into the pan.
Cook the rhubarb, sugar, cornstarch, water, and 1 teaspoon vanilla in a saucepan over medium heat for 5 minutes, until thick.
Spread the rhubarb filling over the crust and sprinkle the remaining crumb mixture on top.
Bake at 350 F for 25 minutes, until the top is lightly browned.
