Ingredients

  • 1/4 cup white sugar
  • 2 tbsp lemon juice
  • 2 tbsp cornstarch
  • 1/2 tsp vanilla extract
  • 1 pinch salt
  • 1/2 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 cup rolled old-fashioned oats
  • 1/4 cup butter
  • 1/2 tsp baking powder
  • 1/2 tsp ground cinnamon
  • 1 dash salt

Steps

  1. Heat the oven to 450 F.
  2. Slice the peaches into a 9-inch ovenproof skillet, then stir in the white sugar, lemon juice, cornstarch, vanilla, and salt.
  3. Mix the flour, brown sugar, oats, baking powder, cinnamon, and salt in a bowl.
  4. Cut in the butter until coarse crumbs form, then scatter the topping over the peaches.
  5. Bake for 10 minutes, until the peaches bubble and the topping browns lightly.
