Ingredients

  • 3 cups all-purpose flour
  • 1 cup sugar
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 cup unsalted butter
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/2 cup granulated sugar
  • 4 tsp cornstarch
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 4 cups peaches
  • 1 tbsp lemon juice

Steps

  1. Heat the oven to 375 F and grease a 9-by-13-inch pan with cooking oil.
  2. Mix flour, one cup sugar, baking powder, and salt, then blend in butter, egg, and vanilla until crumbly.
  3. Press half the crumb mixture into the pan and bake for 15 minutes.
  4. Stir peaches with the remaining sugar, cornstarch, cinnamon, nutmeg, and lemon juice.
  5. Spread the peach mixture over the crust and cover it with the remaining crumbs.
  6. Bake for 35 minutes, then cool the bars in the pan for 20 minutes before cutting.
