Ingredients

  • 5 1/2 large fresh yellow peaches
  • 1/4 cup sugar
  • 1/2 cup salted butter
  • 3/4 cup sugar
  • 1 tsp vanilla
  • 1 cup flour
  • 1 tsp baking powder
  • 1 pinch salt
  • 1/4 cup turbinado sugar (optional)
  • whipped cream or vanilla ice cream for serving (optional)

Steps

  1. Heat the oven to 350 F and melt the butter in a 9-by-13-inch baking dish for 5 minutes.
  2. Slice the peaches and toss them with 1/4 cup sugar and cornstarch, if using.
  3. Whisk the flour, baking powder, salt, 3/4 cup sugar, vanilla, and water together in a bowl for 5 minutes.
  4. Pour the batter over the melted butter, then spread the peaches evenly across the top.
  5. Sprinkle with turbinado sugar, if using, and bake for 35 minutes until golden and bubbling.
  6. Cool the cobbler for 10 minutes before serving.
