Ingredients

  • 2 lb russet potatoes
  • 1 1/2 tsp salted butter
  • 1/4 tsp salt
  • 1 tsp salted butter
  • 2 cloves garlic
  • 1 can (6 oz) tomato paste
  • 2 tsp paprika
  • 1/4 tsp cayenne
  • 1/4 tsp salt
  • 1/4 tsp sugar
  • 3/4 cup water
  • 2 tbsp red wine vinegar

Steps

  1. Heat the oven to 425 F.
  2. Melt 1 1/2 teaspoons butter, toss it with the potatoes and salt, and spread them on a large baking sheet.
  3. Roast the potatoes for 35 to 40 minutes, turning halfway, until crisp outside and tender inside.
  4. Melt the remaining butter in a medium saucepan, then cook the garlic for 1 minute.
  5. Stir in the tomato paste, paprika, cayenne, salt, sugar, water, and vinegar, then simmer for 10 minutes.
  6. Spoon the sauce over the roasted potatoes before serving.
