Ingredients

  • 2 cup sweet corn kernels
  • 1/2 cup milk
  • 2 eggs
  • 2 tbsp salted butter
  • 1 1/2 cup unbleached all purpose flour
  • 2 tbsp cornmeal
  • 2 tbsp sugar
  • 2 tsp baking powder
  • 1 tsp salt
  • 1/2 tsp paprika

Steps

  1. Heat the oven to 350 F and grease a 9-inch round pan with the butter.
  2. Blend the corn, milk, eggs, and remaining melted butter until mostly smooth.
  3. Whisk the flour, cornmeal, sugar, baking powder, salt, and paprika in a bowl.
  4. Stir the corn mixture into the dry ingredients until just combined.
  5. Spread the batter in the pan and bake for 35 minutes.
  6. Cool the bread for 10 minutes before slicing.
