Ingredients
- 3 1/2 lb russet potatoes
- 2 cups heavy cream
- 1/2 cup unsalted butter
- 1 1/2 tsp salt

Steps
- Peel and cut the potatoes into even chunks.
- Boil the potatoes in a large pot of salted water for 25 minutes until tender.
- Drain the potatoes and let them steam dry for 5 minutes.
- Warm the cream and butter in a saucepan over low heat for 5 minutes.
- Mash the potatoes with the warm cream mixture and salt until smooth.
- Keep the mashed potatoes covered over low heat for up to 15 minutes.
