Ingredients

  • 4 lb russet potatoes peeled
  • 1 1/4 cups hot milk we used whole milk
  • 16 tbsp unsalted butter
  • 1 1/2 tsp salt (optional)
  • 1 tbsp fresh parsley or chives (optional)

Steps

  1. Cut the peeled potatoes into 1-inch pieces.
  2. Boil the potatoes in a large pot of salted water for 20 minutes, until tender.
  3. Warm the milk and butter in a saucepan over low heat for 5 minutes.
  4. Drain the potatoes thoroughly.
  5. Mash the potatoes with the warm milk, butter, and salt until smooth.
  6. Stir in the parsley or chives if using.
