Ingredients
- 1 large heirloom tomato
- 1 shallot
- 1 tbsp extra virgin olive oil
- 1 cup chopped kale leaves
- 1 sweet italian sausage link
- 1 pinch red pepper flakes
- salt & pepper
- goat cheese (optional)
- basil (optional)
Steps
- Heat the oven to 425 F, cut the top from the tomato, and scoop out its center.
- Heat olive oil in a skillet over medium heat, then cook shallot and crumbled sausage for 5 minutes.
- Stir in kale and red pepper flakes, and cook for 2 minutes until the sausage reaches 160 F.
- Season the filling with salt and pepper, spoon it into the tomato, and top with goat cheese if using.
- Bake the stuffed tomato for 5 minutes, then sprinkle with basil if using.
