3 3/4 cups all-purpose flour
1 1/2 cups warm water
2 1/4 tsp active dry yeast
1/2 tsp granulated sugar
1 1/2 tsp salt
2 tsp olive oil

1/3 cup fresh rosemary (optional)

Steps

Stir the warm water, yeast, and sugar in a large bowl and rest for 5 minutes.
Mix in the flour, salt, and 2 teaspoons olive oil, knead until smooth, cover, and let rise for 60 minutes.
Press the dough into an oiled 9-by-13-inch baking pan, cover, and let rise for 90 minutes.
Heat the oven to 425 F and press deep dimples across the dough.
Warm the remaining olive oil with the garlic and rosemary over low heat for 3 minutes, then spoon it over the dough and sprinkle with coarse salt.
Bake for 22 minutes, until golden, then cool the focaccia for 15 minutes before cutting.
