1/4 cup vegetable oil
1/2 cup unsalted butter
1 cup light brown sugar
1/4 cup light corn syrup
1/4 cup maple syrup
1/2 tsp salt
1/2 tsp baking soda

Steps

Heat the oven to 250 F and grease two large baking sheets with cooking oil.
Heat the oil in a large pot, add the popcorn kernels, cover, and shake until popping slows.
Melt the butter in a saucepan, stir in the brown sugar, corn syrup, maple syrup, and salt, and boil for 5 minutes.
Remove the caramel from the heat, stir in the baking soda, and pour it over the popcorn.
Spread the coated popcorn on the baking sheets and bake for 45 minutes, stirring every 15 minutes.
Cool the caramel corn for 20 minutes before breaking it apart.
