Ingredients
- 2 1/3 cups unbleached all-purpose flour
- 2 tsp ground ginger
- 1 1 /2 tsp ground cinnamon
- 1/2 tsp baking soda
- 1/4 tsp ground cloves
- 1/4 tsp fine sea salt
- 3/4 cup unsalted butter
- 1/2 cup packed light brown sugar
- 1/2 cup unsulphured molasses
- 1 large egg
Steps
- Whisk the flour, ginger, cinnamon, baking soda, cloves, and salt in a medium bowl.
- Beat the butter and brown sugar in a large bowl until smooth, then beat in the molasses and egg.
- Stir the dry mixture into the butter mixture until a soft dough forms.
- Divide the dough into two disks, wrap them, and chill for 30 minutes.
- Heat the oven to 350 F and roll the dough 1/4 inch thick on a lightly floured surface.
- Cut the dough into shapes and bake on baking sheets for 8 to 10 minutes until set.
