Ingredients

  • 1 cup creamy peanut butter
  • 1/3 cup unsalted butter
  • 1/2 tsp vanilla extract
  • 1/8 tsp kosher salt
  • 2 1/4 cups powdered sugar
  • 10 oz semi-sweet chocolate
  • vegetable oil (optional)

Steps

  1. Beat the peanut butter, butter, vanilla, and salt together in a medium bowl.
  2. Mix in the powdered sugar until a firm dough forms.
  3. Shape the dough into 24 balls and place them on a lined baking sheet.
  4. Chill the balls for 30 minutes.
  5. Melt the chocolate in a microwave-safe bowl, stirring every 20 seconds.
  6. Dip each ball in chocolate, leaving a small peanut butter spot uncovered.
  7. Chill the buckeyes for 30 minutes until the coating is firm.
