Ingredients
- 4 1/2 kg unsmoked gammon
- 2 carrots halved
- 1 onion peeled and quartered
- 1 leek chopped into large chunks
- 1 bay leaf
- 2 sprigs thyme
- 2 heaped tbsp demerara suagr
- 1 tbsp english mustard
Steps
- Put the gammon, carrots, onion, leek, bay leaf, and thyme in a large pot and cover them with water.
- Bring the pot to a boil, then simmer for about 30 minutes while checking that the center reaches 145 F.
- Heat the oven to 425 F and transfer the gammon to a roasting pan.
- Mix the sugar and mustard, spread the glaze over the gammon, and roast for 15 minutes.
- Check the center with a thermometer and continue cooking if needed until it reaches 145 F.
