Ingredients

  • 1 cup granulated sugar
  • 2 tbsp cornstarch
  • 1 tsp finely grated fresh ginger
  • 6 large egg whites
  • 1 pinch salt
  • 2 tsp fresh lime juice
  • 1 lime
  • 1/4 cup granulated sugar
  • 2 cups cubed ripe papaya
  • 1 cup cubed ripe pineapple
  • 1 kiwi
  • 1/2 cup raspberries
  • 2 cans (15 oz) full-fat unsweetened coconut milk
  • 1 tsp vanilla extract
  • 1/2 cup shredded sweetened coconut (optional)

Steps

  1. Chill the unopened coconut milk cans for at least 2 hours, then chill a mixing bowl and beaters.
  2. Heat the oven to 250 F and line a baking sheet with parchment.
  3. Beat the egg whites and salt until foamy, then gradually beat in the sugar until stiff and glossy.
  4. Fold in the cornstarch, ginger, and lime juice, shape a 9-inch round on the baking sheet, and bake for 75 minutes.
  5. Turn off the oven, leave the pavlova inside for 60 minutes, then cool it completely.
  6. Scoop the solid coconut cream into the chilled bowl, beat it with vanilla, and spread it over the pavlova with the sugared papaya, pineapple, kiwi, raspberries, lime zest, and shredded coconut.
