Ingredients

  • 2 tbsp unsalted butter
  • 2 cups cranberries
  • 2/3 cup pecans
  • 1/2 cup granulated sugar
  • 12 tbsp unsalted butter
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/4 tsp almond extract
  • 1 cup all-purpose flour
  • 1/2 tsp salt
  • 1 tbsp coarse sparkling or turbinado sugar (optional)

Steps

  1. Heat the oven to 350 F and grease a 9-inch pie plate with 2 tablespoons butter.
  2. Toss the cranberries and chopped pecans with 1/2 cup sugar, then spread them in the pie plate.
  3. Beat the remaining butter and sugar until creamy, then beat in the eggs, vanilla, and almond extract.
  4. Stir in the flour and salt, then spread the batter evenly over the cranberry mixture.
  5. Sprinkle the top with coarse sugar if using and bake for 40 to 45 minutes, until golden and set.
  6. Cool the pie for 10 minutes before slicing.
