Ingredients

  • 1 3/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup unsalted butter
  • 3/4 cup sugar
  • 2 large eggs
  • 1 cup mashed very ripe bananas
  • 2 tbsp fresh lemon juice
  • 1 1/2 tsp vanilla extract

Steps

  1. Heat the oven to 350 F and grease a nine-by-five-inch loaf pan with cooking oil.
  2. Whisk flour, baking soda, baking powder, and salt in a medium bowl.
  3. Beat butter and sugar in a large bowl until smooth.
  4. Beat in the eggs, mashed bananas, lemon juice, and vanilla.
  5. Stir the dry mixture into the banana mixture just until combined.
  6. Pour the batter into the pan and bake for 50 to 55 minutes, until a tester comes out clean.
