Ingredients

  • 2 1/2 cups cake flour
  • 2 tsp cornstarch
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup butter
  • 1/4 cup all vegetable shortening
  • 1 cup granulated sugar
  • zest of 1 large lemon
  • 1 large egg
  • 1 large egg white
  • 1 tsp lemon extract
  • 1 tsp vanilla extract
  • 1/3 cup salted butter
  • 2 1/2 cups powdered sugar
  • 1/2 tsp lemon extract
  • 2 3/4 tbsp fresh lemon juice
  • yellow food coloring or yellow sprinkles (optional)

Steps

  1. Heat the oven to 350°F and line two baking sheets with baking paper.
  2. Whisk the cake flour, cornstarch, baking powder, and salt in a bowl.
  3. Beat the butter, shortening, sugar, and lemon zest until smooth, then beat in the egg, egg white, lemon extract, and vanilla.
  4. Stir in the dry mixture, scoop tablespoonfuls onto the sheets, and bake for 10 to 12 minutes.
  5. Cool the cookies on the sheets for 5 minutes, then move them to a rack to cool completely.
  6. Beat the salted butter, powdered sugar, lemon extract, and lemon juice until smooth, then spread the frosting over the cookies.
