Ingredients
- 1 1/2 kg maris piper potatoes
- 2 onions
- 1 tbsp fennel seeds crushed
- 1 lemon zested and juiced
- 450 ml vegetable or chicken stock
- 50 g unsalted butter
Steps
- Heat the oven to 375 F.
- Peel and thinly slice the potatoes and onions.
- Melt half the butter in a 9-by-13-inch baking dish, then layer in the potatoes, onions, fennel seeds, lemon zest, salt, and pepper.
- Pour the stock and lemon juice evenly over the layers, then dot with the remaining butter.
- Cover the dish with foil and bake for 55 minutes.
- Remove the foil and bake for 20 minutes, until the potatoes are tender and the top is browned.
