Ingredients

  • 2 lb asparagus
  • 3 tbsp unsalted butter
  • 2 tbsp olive oil
  • 5 cloves garlic
  • 1/2 cup parmesan cheese
  • 1/2 cup panko breadcrumbs
  • 2 tsp parsley
  • 1 pinch salt (optional)
  • 1 pinch pepper

Steps

  1. Heat the oven to 425 F and arrange the asparagus on a large baking sheet.
  2. Melt 1 tablespoon of butter with the olive oil and garlic in a small skillet over medium heat for 2 minutes.
  3. Pour the garlic mixture over the asparagus and toss with salt and pepper.
  4. Roast the asparagus for 12 to 14 minutes, until tender.
  5. Melt the remaining butter in the skillet, then toast the panko for 3 to 4 minutes.
  6. Stir the parmesan and parsley into the panko, scatter it over the asparagus, and broil for 1 to 2 minutes.
