Ingredients

  • 1 cup cashews
  • 3/4 cup water
  • 1/2 tsp salt
  • 1 clove garlic
  • 1 tbsp oil
  • 4 large sweet potatoes
  • 2 cups baby spinach
  • 1 handful fresh basil leaves
  • salt and pepper to taste (optional)
  • olive oil for drizzling (optional)

Steps

  1. Blend the cashews, water, salt, and garlic until smooth.
  2. Peel the sweet potatoes and cut them into noodles with a spiralizer.
  3. Heat the oil in a large skillet over medium heat.
  4. Cook the sweet potato noodles for 7 to 9 minutes, stirring often, until tender.
  5. Add the spinach and basil and cook for 2 minutes, until the spinach wilts.
  6. Stir in the cashew sauce and warm for 1 to 2 minutes, adding pepper if desired.
