Ingredients
- 2 lb fingerling potatoes
- 1/4 cup grated parmesan cheese
- 3 1/2 tbsp duck fat
- 2 tbsp fresh parsley
- sea salt and ground pepper (optional)
Steps
- Heat the oven to 425 F and place the duck fat on a large baking sheet.
- Warm the baking sheet in the oven for 5 minutes, until the fat melts.
- Halve the potatoes lengthwise and toss them with the warm duck fat, salt, and pepper.
- Arrange the potatoes cut-side down and roast for 35 minutes.
- Turn the potatoes, sprinkle on the parmesan, and roast for 5 more minutes.
- Toss the potatoes with parsley before serving.
