Ingredients

  • 2 tbsp olive oil
  • 3 cups fresh corn
  • 1 shallot
  • 1 clove garlic
  • 1/2 cup light sour cream or plain greek yogurt
  • 4 oz 1/3-fat cream cheese
  • 1 cup grated cotija cheese (optional)
  • 1/4 tsp each sea salt and ground black pepper

Steps

  1. Finely chop the shallot and garlic, then place them in a medium bowl.
  2. Add the corn, olive oil, sour cream, cream cheese, salt, and pepper.
  3. Stir the mixture until the cream cheese is evenly blended.
  4. Fold in the cotija cheese and chill the dip for 20 minutes.
