Ingredients

2 cups ripe strawberries
2 tbsp water
1/4 cup raw sugar
1/4 tsp fine sea salt
15 oz can full fat coconut milk
1 tbsp arrowroot starch

Steps

Mash 1 cup of strawberries and chop the remaining strawberries into small pieces.
Cook the mashed strawberries, water, sugar, and salt in a medium saucepan over medium heat for 5 minutes.
Whisk the arrowroot into the coconut milk, then stir it into the saucepan and cook for 3 minutes until thickened.
Stir in the chopped strawberries and cool the mixture for 5 minutes.
