Ingredients
- 9 " single crust pie dough
- 1/2 cup butter
- 1 1/4 cups sugar
- 3 large eggs
- 3 tbsp all-purpose flour
- 1/4 tsp salt
- 1 cup buttermilk
- 1 tbsp lemon juice
- 1 tbsp lemon zest
- 2 tsp vanilla extract
- sweetened whipped cream and berries for topping (optional)
Steps
- Heat the oven to 350 F and place the pie dough in a 9-inch pie pan.
- Beat the butter and sugar in a large bowl until smooth.
- Add the eggs, flour, salt, buttermilk, lemon juice, lemon zest, and vanilla, then whisk until combined.
- Pour the filling into the crust and place the pie on a baking sheet.
- Bake for 55 minutes, until the center is set but still slightly soft.
- Cool the pie for 45 minutes before adding whipped cream and berries, if using.
