Ingredients

  • 1 cup yellow cornmeal
  • 1 cup self-rising flour
  • 1/2 cup granulated sugar
  • 1 cup buttermilk
  • 1/3 cup whole milk
  • 2 large eggs
  • 3 tbsp honey
  • 1/4 cup unsalted butter
  • 1/4 cup vegetable oil

Steps

  1. Heat the oven to 400 F and place the butter and oil in a 9-inch square pan.
  2. Heat the pan for 5 minutes, then swirl to coat it with the melted butter and oil.
  3. Whisk the cornmeal, flour, and sugar, then stir in the buttermilk, milk, eggs, and honey until just combined.
  4. Pour the batter into the hot pan and bake for 20 to 25 minutes, until golden and set in the center.
