12 tbsp butter
kosher salt and freshly ground black pepper
1 cup hot sauce

Steps

Heat the oven to 350 F and place the turkey breast-side up in a large roasting pan.
Melt the butter in a small saucepan over low heat.
Brush the melted butter over the turkey, then season it with salt and pepper.
Roast the turkey for 2 1/2 to 3 1/4 hours, checking that the thickest breast and thigh reach 165 F.
Brush the hot sauce over the turkey during the final 20 minutes of roasting.
Rest the turkey for 20 minutes before carving.
