1/2 tsp salt
black pepper
small bunch of fresh herbs - 4 rosemary sprigs
12 cloves garlic
150 g / 5 oz unsalted butter
1 1/4 tsp table salt or 1 1/2 tsp kosher salt
1/2 tsp black pepper
4 large garlic cloves
1 tbsp finely chopped sage
1 tbsp finely chopped rosemary
1 tbsp fresh thyme leaves
1 tbsp finely chopped parsley leaves

Steps

Heat the oven to 350 F and place the turkey breast in a roasting pan.
Mash the butter with the table salt, black pepper, four minced garlic cloves, sage, rosemary, thyme, and parsley.
Rub the herb butter over the turkey breast and place the remaining garlic and rosemary around it.
Roast for 85 to 95 minutes, basting once, until the thickest part reaches 165 F.
Rest the turkey loosely covered for 15 minutes before slicing.
