Ingredients

  • 1 batch pie pastry
  • 3/4 cup white sugar
  • 4 tbsp cornstarch
  • 1/3 tsp salt
  • 2 tbsp lemon zest
  • 1 tbsp lemon juice
  • 2 tbsp salted butter
  • 1 large egg
  • 1 tbsp water
  • 1 1/2 tbsp coarse white sugar

Steps

  1. Heat the oven to 425 F and place the bottom pastry in a pie pan.
  2. Mix the sugar, cornstarch, salt, lemon zest, lemon juice, and blueberries in a bowl.
  3. Pour the blueberry mixture into the pastry and dot it with butter.
  4. Cover with the remaining pastry, seal the edge, cut vents, and brush the top with beaten egg and water.
  5. Sprinkle with coarse sugar, bake at 425 F for 15 minutes, reduce the heat to 375 F, and bake 30 minutes more.
  6. Cool the pie for at least 10 minutes before cutting.
