1 lb egg fettuccine
4 tbsp butter
1 onion
4 cloves garlic
1 lb mushrooms
24 oz lean beef fillet steaks
2 tsp dijon mustard
1 tsp paprika
1/3 cup dry white wine
2 cups beef broth
2 tbsp flour
1 tbsp worcestershire sauce
1 pinch salt (optional)
1 pinch pepper (optional)
1 cup light sour cream

Steps

Boil salted water in a large pot, cook the egg fettuccine until tender, then drain it.
Melt 2 tablespoons butter in a large skillet over medium heat, cook the onion and mushrooms for 7 minutes, then add the garlic for 1 minute.
Slice the beef into strips, season with salt and pepper, and cook it in the skillet with the remaining butter for 4 to 5 minutes, until it reaches 145 F.
Stir in the flour, mustard, paprika, wine, beef broth, and Worcestershire sauce, then simmer for 5 minutes until thickened.
Cook ground meat until it reaches 160 F inside.
Remove the skillet from the heat, stir in the sour cream, and toss the sauce with the drained fettuccine.
