Ingredients

  • 1 3/4 cup white self raising flour
  • 3/4 cup wholemeal self raising flour
  • 1/2 cup granulated white sugar
  • 1 1/4 tsp ground cinnamon
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 3 ripe bananas
  • 2 large eggs
  • 1/2 cup maple syrup
  • 1/2 cup unsalted butter
  • 1/3 cup milk
  • 2 tsp pure vanilla extract

Steps

  1. Heat the oven to 350 F and grease a 9-by-13-inch baking pan.
  2. Whisk the self-rising flours, sugar, cinnamon, baking powder, baking soda, and salt in a large bowl.
  3. Mash the bananas in another bowl, then whisk in the eggs, maple syrup, melted butter, milk, and vanilla.
  4. Stir the wet mixture into the dry mixture just until no dry spots remain.
  5. Spread the batter in the pan and bake for 30 to 35 minutes, until the center is set.
