Ingredients

  • 2 cups sugar
  • 2 eggs
  • 1 cup oil
  • 1 tbsp vanilla
  • 3 cups all-purpose flour
  • 1 tsp salt
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 3 cups peeled
  • brown sugar for topping (optional)

Steps

  1. Heat the oven to 375 F and grease eighteen muffin cups in two muffin tins.
  2. Whisk the sugar, eggs, oil, and vanilla in a large bowl until blended.
  3. Stir in the flour, salt, baking soda, and cinnamon until just combined.
  4. Fold in the 3 cups peeled apples.
  5. Divide the batter among the muffin cups and sprinkle with brown sugar if using.
  6. Bake for 17 minutes until the muffins are risen and firm in the centers.
