Ingredients
- 1 1/4 cups almond flour
- 1/4 cup coconut flour
- 1 tsp pure vanilla extract
- 6 tbsp organic cane sugar
- 6 tbsp butter
- 1 large egg
- 1/2 tsp cinnamon
- 1/4 tsp fine sea salt
- 1/4 tsp baking soda
- 1/4 tsp cream of tartar
- 2 tbsp organic cane sugar
- 1 1/2 tsp cinnamon
Steps
- Heat the oven to 350 F and line a baking sheet with parchment.
- Beat the butter and six tablespoons sugar until smooth, then beat in the egg and vanilla.
- Mix the almond flour, coconut flour, cinnamon, salt, baking soda, and cream of tartar into the butter mixture.
- Stir the remaining sugar and cinnamon in a small bowl.
- Shape the dough into 14 balls, roll each in cinnamon sugar, and place them on the baking sheet.
- Bake for 10 to 12 minutes until the edges are set, then cool the cookies on the sheet.
