Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup almond flour
  • 1 tsp granulated sugar (optional)
  • 1/2 tsp salt
  • 1/2 cup lard or butter
  • 1/4 cup ice water
  • 1 large egg
  • 1/3 cup almond flour
  • 2 lb peaches
  • 1/2 cup granulated sugar
  • 1 tbsp lemon juice
  • 1/2 tsp almond extract

Steps

  1. Mix the flour, almond flour, sugar, and salt, then cut in the cold lard or butter and stir in the ice water.
  2. Shape the dough into a disk and chill it for 30 minutes.
  3. Toss the peaches with sugar, lemon juice, almond extract, and almond flour.
  4. Roll the dough into a 12-inch circle on a baking sheet and spread the peach mixture in the center.
  5. Fold the dough over the fruit and brush the crust with beaten egg.
  6. Bake at 400 F for 40 to 45 minutes, until the crust is golden and the peaches are tender.
