Ingredients

  • 250 g agnolotti or other small ravioli-type pasta
  • 1/2 cup single cream
  • 1 pinch ground black pepper
  • 1 handful chopped flat-leaf parsley
  • 1 dash sweet sherry
  • freshly-grated parmesan cheese for garnish (optional)

Steps

  1. Bring the chicken broth to a gentle boil in a large pot over medium-high heat.
  2. Add the agnolotti and simmer for the package cooking time, usually 8 to 12 minutes.
  3. Reduce the heat to low and simmer the soup for 20 minutes.
  4. Stir in the cream, black pepper, and sherry, then warm for 3 minutes without boiling.
  5. Stir in the parsley and Parmesan, if using, before serving.
