1 batch white sourdough
strong or plain flour for dusting (optional)
2 x 400g cans plum tomatoes
2 tbsp extra virgin olive oil plus extra to serve
1 tsp dried oregano
300 g mozzarella torn into chunks
small bunch of basil leaves picked (optional)

Steps

Heat the oven to 475 F with a large baking sheet inside.
Let the sourdough rest at room temperature for 60 minutes, then divide and stretch it on an oiled sheet.
Crush the tomatoes with the olive oil and oregano, then spread the mixture over the dough.
Top the pizzas with mozzarella and bake for 12 to 15 minutes until the crust is browned and the cheese melts.
Scatter basil over the hot pizzas and rest them for 5 minutes before cutting.
